  • 3 cans chunk tuna in water, drained
  • 6 – 8 cooked greenfigs, peeled and excess strings removed
  • ¼ onion, finely grated
  • ¼ cup milk
  • 2 oz butter
  • 2 tsp fresh green seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp pepper sauce
  • 1/2 cup breadcrumbs
  • 1 egg,lightly beaten
  • 1 cup flour
  • Oil for frying (approx. ¾ cup)
  • Additional salt and pepper


  1. Place the greenfigs in a bowl. Add the milk, butter and onion. Mash with a fork or potato masher until smooth but still a little chunky.

  2. Add the tuna, green seasoning, breadcrumbs, egg, salt, black pepper and pepper sauce. Mix well. Taste the mixture and adjust seasoning if necessary.

  3. Form the mixture into even sized patties, approximately ¼ – ½ inch thick and place on a large tray. Cover with plastic wrap and refrigerate for 1 hour.

  4. Place the flour in a bowl. Season the flour with a little salt and pepper.

  5. Dip the patties (individually), in the flour, ensuring the patties are lightly covered with the flour.

  6. Heat the oil over medium high heat in a medium saucepan.

  7. Add the patties in batches, being careful not to overcrowd the pan. Let cook on one side for at least 4 – 5 minutes and then cook on the other side until the patties are golden brown.

  8. Remove and let drain on a paper towel. Serve warm.
