Complexity: Easy


  • 3 cups flour
  • 1 tsp baking soda
  • Pinch of salt
  • 3 tbsp sugar
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground clove
  • ½ stick butter
  • 1 cup buttermilk
  • 1 large egg, lightly beaten
  • 1 tsp mixed essence
  • 1 tbsp lemon zest
  • 1 cup raisins


  1. Preheat the oven to 375 degrees F. Lightly grease a baking tray and set aside.
  2. Mix dry ingredients together. Crumble the butter into the dry ingredients until evenly distributed.
  3. Add the egg, buttermilk. lemon zest, essence and raisins and mix just until combined. The mixture should be similar to coconut drops: it will be a bit dense and fairly stiff.
  4. Shape the dough into a loaf on the greased tray. Bake in the preheated oven for 35 – 40 minutes or until a knife inserted into the centre comes out clean. Place on a wire rack to cool.
